When life gives you...

Some of you may have noticed that Lucas has a rash on his face. He's had the rash for over a month now. We took him to the doctor and they're not totally sure what's causing it, but they think it's probably from a food allergy. Lucas has also been having intestinal problems lately so we've just decided to make the switch to soy milk and see if this helps at all. The problem is, we bought a brand new gallon of whole milk the day before we decided to make the switch.

Turns out... no problem at all. When life gives me milk, I make ice cream. I went to the store yesterday to get some soy milk, and picked up a few other ingredients, plus some I already had and here's what you get.

I decided to make three different types of ice cream. I made chocolate for Ryan, cause it's his favorite. Next I decided to do a spin on a raspberry ice cream recipe I have and do a triple berry ice cream. And last of all I made strawberry cheesecake ice cream which is my absolute favorite. Here's a picture of me adding the strawberries. Oh I get excited just seeing the strawberries!

I love fruit and cheesecake so this is just the best ice cream flavor ever. I've posted the recipe for this one before so you can go here if you want it. The chocolate recipe was just the one from the recipe booklet that came with the machine and it's a little too rich for me so I recommend you find a different one. The raspberry ice cream is amazing so I'm going to post the original recipe and if you'd like to play around with the fruit you can. Thanks to Cheryl for the recipe.

Raspberry Ice Cream

3-oz. pkg. raspberry gelatin
½ cup boiling water
10-oz. pkg. frozen raspberries, thawed and mashed
2 eggs
1 cup whipping cream
4-oz. pkg. instant vanilla pudding
2/3 cup sugar
1 tsp. vanilla
4 cups half & half

Dissolve gelatin in boiling water. Stir in mashed raspberries. Beat eggs; add whipping
cream, pudding mix, sugar and vanilla. Stir in raspberry mixture and half & half. Pour
into freezer container and freeze according to manufacturer’s directions. Makes 2 quarts.

And here are the finished products. The strawberry cheesecake looks pretty much the same as triple berry so I just did one picture. Switching to soy milk was never so yummy.

Yum. Ice cream is always a good idea, even in the winter.

Wow, that first one looks like a chocolate overdose. Bring it on! That would probably give ME a rash.

Oh yummy! Kate-shine these look so delicious. I'm a huge fan of the strawberry cheesecake so now i'll have to try the other two as well. Maybe I'll switch lulu to soy milk...
